Ingredients

  • 2 tsp ground coriander
  • 1.5 tsp ground cumin
  • 0.5 tsp ground cinnamon
  • 3 cloves
  • 2 bay leaves
  • 1 tsp ground paprika
  • 0.5 tsp cayenne pepper (optional for heat)
  • 2 ripe tomatoes, diced
  • 3 medium potatoes, peeled and cubed
  • 1.5 cups chicken stock or water
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 1 cup coconut milk
  • 2 tbsp fresh cilantro, chopped

Directions

Step 1

Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.

Add the chopped onion and sauté until soft and golden, about 5 minutes.

Stir in the garlic and ginger, cooking for another 1-2 minutes until fragrant.
