Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 0.5 cup unsalted butter
  • 1 large egg
  • 1 cup buttermilk
  • 0.5 cup raisins or currants (optional)
  • 2 tablespoons milk or cream (for brushing)
  • 1 tablespoon coarse sugar (for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingertips to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate bowl, beat the egg and mix it with the buttermilk.

Step 5

Make a well in the center of the dry ingredients and pour in the buttermilk mixture. Stir gently until the dough just comes together. If using raisins or currants, fold them in at this stage.

Step 6

Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Be careful not to overwork the dough.

Step 7

Pat the dough into a circle about 1 inch thick. Using a floured round cutter or knife, cut out 8 triangles or rounds from the dough.

Step 8

Place the scones on the prepared baking sheet, spacing them about 2 inches apart.

Step 9

Brush the tops of the scones with milk or cream and sprinkle with coarse sugar for a golden finish.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown and cooked through.

Step 11

Remove the scones from the oven and let them cool slightly on a wire rack before serving.
