Ingredients

  • 500 grams Large prawns (peeled and deveined)
  • 1 large Fresh mango (ripe but firm, diced)
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (finely grated)
  • 2 stalks Spring onions (sliced thinly, white and green parts separated)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine (Chinese cooking wine)
  • 2 teaspoons Cornstarch
  • 60 ml Water
  • 2 tablespoons Vegetable oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon White pepper

Directions

Step 1

In a small bowl, combine the soy sauce, oyster sauce, Shaoxing wine, water, and cornstarch. Mix well to create the sauce base and set aside.

Step 2

Pat the prawns dry with a paper towel and season with salt and white pepper. Set aside.

Step 3

Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the prawns and sauté for 1-2 minutes on each side until pink and just cooked through. Remove the prawns from the pan and set aside.

Step 4

In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic, grated ginger, and the white parts of the spring onions. Stir-fry for about 30 seconds until fragrant.

Step 5

Add the diced mango to the pan and stir-fry gently for another 1-2 minutes to warm the mango.

Step 6

Return the cooked prawns to the pan and pour the prepared sauce over the mixture. Stir well to coat everything evenly. Cook for another 1-2 minutes until the sauce has thickened slightly.

Step 7

Sprinkle the green parts of the spring onions over the dish and give it a final stir.
