Ingredients

  • 500 grams large shrimp (peeled and deveined)
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil
  • 4 cloves garlic (minced)
  • 1 tablespoon ginger (julienned)
  • 1 green bell pepper (sliced into thin strips)
  • 1 red bell pepper (sliced into thin strips)
  • 1 onion (sliced)
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 3 tablespoons chicken stock
  • 2 spring onions (cut into 2-inch pieces)
  • 0.25 teaspoon white pepper (optional)

Directions

Step 1

Clean the shrimp, pat them dry with a paper towel, and lightly coat them with 2 tablespoons of cornstarch. Set aside.

Step 2

In a small bowl, mix together the oyster sauce, soy sauce, Shaoxing wine, sugar, sesame oil, and chicken stock to create the sauce. Set aside.

Step 3

Heat 2 tablespoons of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp in a single layer and cook for 1-2 minutes on each side until they turn pink. Remove the shrimp and set them aside.

Step 4

In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and julienned ginger, stirring for about 30 seconds until fragrant.

Add the sliced green bell pepper, red bell pepper, and onion to the wok. Stir-fry for 2-3 minutes until the vegetables are slightly tender but still crisp.

Return the cooked shrimp to the wok and pour in the prepared sauce. Stir well to coat all the ingredients evenly.

Add the spring onions and stir-fry for another 1-2 minutes. Taste and adjust seasoning if needed, adding a pinch of white pepper for extra flavor if desired.

Remove from heat and serve immediately with steamed white rice or noodles.
