Ingredients

  • 2 cups Sweet corn kernels (fresh, frozen, or canned)
  • 4 cups Chicken stock or vegetable stock
  • 2 large Eggs
  • 2 tablespoons Cornstarch
  • 3 tablespoons Water
  • 1 teaspoon Soy sauce
  • 1 pinch White pepper
  • 1 teaspoon Salt
  • 2 tablespoons Green onions (optional, for garnish)

Directions

Step 1

In a medium pot, combine the chicken or vegetable stock and 1.5 cups of the corn kernels. Bring the mixture to a gentle boil over medium heat.

Step 2

While the stock is heating, use a blender or food processor to puree the remaining 0.5 cups of corn kernels with a small amount of water until smooth. Add the corn puree to the pot and stir well.

Step 3

In a small bowl, mix the cornstarch with 3 tablespoons of water to create a slurry. Stir this mixture into the soup pot and simmer for 5–7 minutes, stirring occasionally, until the soup thickens slightly.

Step 4

Beat the eggs in a small bowl. While stirring the soup in a circular motion, slowly drizzle the beaten eggs into the pot to create delicate egg ribbons.

Step 5

Add the soy sauce, white pepper, and salt to season the soup. Adjust seasoning to taste if needed.

Step 6

Ladle the soup into bowls and garnish with sliced green onions if desired. Serve hot and enjoy!
