Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 4 cups Water
  • 4 cups Shredded cabbage (green or napa)
  • 1 cup Carrots, julienned
  • 1 medium Red bell pepper, thinly sliced
  • 2 stalks Green onions, thinly sliced
  • 0.5 cup Cilantro leaves, roughly chopped
  • 0.5 cup Roasted peanuts or almonds, crushed
  • 2 tablespoons Soy sauce
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 1 clove Garlic, minced
  • 1 teaspoon Fresh ginger, grated
  • 0.25 teaspoon White pepper (optional)

Directions

Step 1

Place the chicken breasts in a pot of water with 1 teaspoon of salt. Bring to a simmer over medium heat, then reduce heat and poach the chicken for 12-15 minutes, or until fully cooked. Remove and set aside to cool slightly.

Once cooled, shred the chicken using two forks and set aside.
