Cut the chicken thighs into bite-sized pieces and place them in a medium bowl.
In the bowl with the chicken, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of Shaoxing wine, 1 tablespoon of cornstarch, and 1 teaspoon of sesame oil. Mix well to coat the chicken evenly. Let it marinate for 15 minutes.
