  • 4 cups Cantaloupe (ripe, peeled, deseeded, and diced)
  • 3 cups Granulated sugar

  • 1 tablespoon Lemon zest
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 cup Water

Directions

Step 1

Peel, deseed, and dice the cantaloupe into small chunks. Measure 4 cups of diced cantaloupe and set aside.

Step 2

In a large, heavy-bottomed pot, combine the diced cantaloupe and 1 cup of water. Bring to a boil over medium heat, then reduce the heat to low and simmer for 10 minutes, stirring occasionally. Use a potato masher or fork to gently mash the cantaloupe until it breaks down into a soft puree.

Step 3

Add the granulated sugar, orange zest, orange juice, lemon zest, and lemon juice to the pot. Stir well to combine.

Step 4

Bring the mixture to a gentle boil over medium heat. Once boiling, reduce the heat to low and simmer uncovered for 40 minutes, stirring frequently to prevent sticking or burning. The mixture should thicken and develop a marmalade-like consistency.

To test for the proper consistency, place a small dollop of the marmalade on a chilled plate and run your finger through it. If it holds its shape, it is ready. If not, continue simmering for another 5-10 minutes.
