  • 2 whole Cantaloupe
  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 0.75 cup Granulated sugar
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoon Salt
  • 4 leaves Fresh mint leaves

Directions

Step 1

Slice the cantaloupes in half lengthwise and scoop out the seeds with a spoon. Use a melon baller to carefully scoop out the flesh into small spheres. Reserve the hollowed-out cantaloupe halves and the melon balls separately. Set the hollowed cantaloupe halves in the refrigerator to chill while preparing the ice cream.

Step 2

In a medium mixing bowl, combine the heavy cream, whole milk, granulated sugar, vanilla extract, and salt. Whisk until the sugar has dissolved completely, approximately 2-3 minutes.

Step 3

Pour the cream mixture into an ice cream maker and process according to the manufacturer’s instructions. This usually takes 20-25 minutes, depending on your machine.

Once the ice cream has thickened, gently fold in the reserved cantaloupe balls to distribute them evenly throughout the ice cream.
