  • 12 pieces cannelloni pasta tubes
  • 500 grams fresh spinach
  • 250 grams ricotta cheese
  • 50 grams parmesan cheese
  • 200 grams mozzarella cheese
  • 1 large egg
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon nutmeg
  • 1 tablespoon olive oil
  • 1 medium onion
  • 2 pieces garlic cloves
  • 500 grams tomato passata
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon sugar

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Boil a large pot of salted water and blanch the spinach for 1–2 minutes until wilted. Drain and squeeze out excess water. Chop finely.

Step 3

In a bowl, combine the chopped spinach, ricotta cheese, grated parmesan, egg, salt, pepper, and nutmeg. Mix well to form the filling.

Heat olive oil in a skillet over medium heat. Finely chop the onion and garlic, add to the skillet, and sauté until soft and translucent, about 5 minutes.
