Ingredients

  • 2 tablespoons Extra-virgin olive oil
  • 250 grams Chorizo sausage
  • 4 cloves Garlic cloves
  • 10 leaves Fresh sage leaves
  • 400 grams Cooked cannellini beans
  • 120 milliliters Chicken or vegetable stock
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Freshly ground black pepper
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Slice the chorizo sausage into bite-sized pieces and add it to the skillet. Cook for 5-7 minutes, stirring occasionally, until browned and crispy. Remove the chorizo with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

Peel and thinly slice the garlic cloves. Add them to the skillet along with the sage leaves. Sauté for 1-2 minutes until the garlic is fragrant and the sage leaves are slightly crispy.

Step 4

Reduce the heat to low and add the cooked cannellini beans to the skillet. Stir to coat the beans in the chorizo fat and aromatics.

Step 5

Pour in the chicken or vegetable stock and season with salt and black pepper. Simmer gently for 8-10 minutes, stirring occasionally, until the beans are heated through and the flavors meld together.

Step 6

Stir in the browned chorizo and cook for another 2-3 minutes to combine and rewarm the sausage.

Step 7

Remove the skillet from the heat and squeeze the lemon juice over the dish. Taste and adjust seasoning if necessary.

Step 8

Serve warm, garnished with fresh parsley if desired, alongside crusty bread or as a side dish with your main course.
