Ingredients

  • 2 tablespoons olive oil
  • 3 units garlic cloves
  • 2 cups cannellini beans (cooked or canned, rinsed and drained)
  • 1 teaspoon fresh rosemary (or 1/2 teaspoon dried rosemary)
  • 0.5 teaspoons red pepper flakes
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons parsley (chopped, for garnish)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Peel and finely slice the garlic cloves, then add them to the skillet. Sauté for about 1-2 minutes, stirring frequently, until fragrant but not browned.

Step 3

Add the cannellini beans to the skillet. Stir gently to coat the beans in the garlic oil.

Step 4

Sprinkle the rosemary and red pepper flakes over the beans. Cook for 5-6 minutes, stirring occasionally, until the beans are warmed through and slightly crispy on the outside.

Step 5

Remove the skillet from the heat and stir in the lemon juice, salt, and black pepper.

Step 6

Transfer the beans to a serving dish and garnish with freshly chopped parsley.

Step 7

Serve immediately as a side dish or spoon over toasted bread for a hearty appetizer.
