Ingredients

  • 300 grams smoked sausage
  • 400 grams cannellini beans
  • 3 tablespoons olive oil
  • 1 small red onion
  • 200 grams cherry tomatoes
  • 1 medium cucumber
  • 2 tablespoons fresh parsley
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 clove garlic

Directions

Step 1

Slice the smoked sausage into rounds about 1/2 inch thick.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 4-5 minutes, stirring occasionally, until golden and slightly crispy. Remove from heat and set aside to cool slightly.

Rinse and drain the cannellini beans, and add them to a large mixing bowl.
