Ingredients

  • 4 pieces chicken thighs
  • 8 cups water
  • 1 large onion
  • 4 pieces garlic cloves
  • 2 large carrots
  • 2 pieces celery stalks
  • 1 cup long-grain white rice
  • 1 medium lemon
  • 2 pieces bay leaves
  • 0.5 cup fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Peel and chop the onion into quarters. Peel the garlic cloves and smash them with the side of a knife. Cut the carrots and celery stalks into large chunks.

Step 2

In a large pot, add the chicken thighs, water, onion, garlic, carrots, celery, bay leaves, salt, and black pepper.

Step 3

Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for about 30 minutes, or until the chicken is cooked through and tender.

Remove the chicken from the pot and set aside. Strain the broth to remove the vegetables and bay leaves, returning the clear broth back to the pot.

Add the rice to the broth and return to a simmer. Cook for about 15 minutes, stirring occasionally, until the rice is tender.
