Ingredients

  • 2 cups Fruit juice (any flavor, 100% juice recommended)
  • 1.5 cups Granulated sugar
  • 4 packs Unflavored gelatin
  • 2 tablespoons Lemon juice
  • 0.5 cup Granulated sugar (for coating)

Directions

Step 1

Prepare an 8x8-inch baking dish by lightly greasing it or lining it with parchment paper. Set aside.

Step 2

In a medium saucepan, combine the fruit juice and lemon juice. Sprinkle the unflavored gelatin evenly over the surface of the juice. Let it sit for 3-5 minutes to soften the gelatin (this is called blooming).

Step 3

After the gelatin has bloomed, place the saucepan over low heat. Stir constantly until the gelatin has completely dissolved.

Step 4

Add the granulated sugar to the saucepan and continue stirring over low heat until the sugar dissolves completely. Avoid bringing the mixture to a boil.

Step 5

Once the mixture is smooth, remove the saucepan from the heat and carefully pour it into the prepared baking dish. Use a spatula to level the surface if needed.

Step 6

Allow the mixture to cool to room temperature, then transfer the dish to the refrigerator. Let it set for at least 4 hours, or until firm.

Step 7

Once set, carefully remove the gelled mixture from the dish. Use a sharp knife or small cookie cutters to cut the gumdrops into your desired shapes.

Step 8

Place the remaining granulated sugar for coating into a shallow bowl. Roll each gumdrop in the sugar to coat all sides.
