Ingredients

  • 16 oz Seitan (store-bought or homemade)
  • 0.5 cup All-purpose flour
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 3 tbsp Olive oil
  • 2 Garlic cloves (minced)
  • 2 Shallots (minced)
  • 0.5 cup White wine
  • 1 cup Vegetable broth
  • 0.25 cup Lemon juice (freshly squeezed)
  • 2 tbsp Capers (rinsed and drained)
  • 2 tbsp Vegan butter
  • 2 tbsp Parsley (chopped, for garnish)

Directions

Step 1

Preheat a large skillet over medium heat.

Step 2

Slice the seitan into cutlet-sized pieces, about 1/2-inch thick.

Step 3

In a shallow dish, whisk together the flour, salt, and ground black pepper.

Step 4

Dredge each piece of seitan in the seasoned flour, ensuring a light, even coating.

Step 5

Heat 2 tablespoons of olive oil in the skillet, then add the seitan cutlets in batches. Cook for 3-4 minutes on each side or until golden brown and crispy. Remove and set aside on a plate lined with paper towels.

Step 6

Add the remaining 1 tablespoon of olive oil to the skillet. Sauté the minced garlic and shallots for 1-2 minutes until fragrant and softened.

Step 7

Deglaze the skillet by carefully pouring in the white wine, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes to reduce slightly.

Step 8

Add the vegetable broth, lemon juice, and capers to the skillet. Bring the sauce to a simmer and let cook for 5 minutes to thicken slightly.

Step 9

Stir in the vegan butter until melted and the sauce becomes silky. Adjust seasoning with additional salt and pepper, if needed.

Step 10

Return the seitan cutlets to the skillet, spooning the sauce over them to coat. Cook for an additional 2-3 minutes until the seitan is warmed through.

Step 11

Garnish with chopped parsley and serve immediately. Pair with mashed potatoes, sautéed spinach, or your favorite pasta for a complete meal.
