Slice the seitan into cutlet-sized pieces, about 1/2-inch thick.
In a shallow dish, whisk together the flour, salt, and ground black pepper.
Dredge each piece of seitan in the seasoned flour, ensuring a light, even coating.
Heat 2 tablespoons of olive oil in the skillet, then add the seitan cutlets in batches. Cook for 3-4 minutes on each side or until golden brown and crispy. Remove and set aside on a plate lined with paper towels.
