Ingredients

  • 50 pieces Fresh, unsprayed violet flowers (with stems removed)
  • 1 large Egg white
  • 100 grams Superfine sugar (caster sugar)
  • 1 teaspoon Water

Directions

Step 1

Carefully inspect the violet flowers and gently rinse them in cold water to remove any dirt or insects. Place the flowers on a clean paper towel and allow them to air dry completely.

Step 2

In a small bowl, whisk together the egg white and water until slightly frothy. This will act as the adhesive for the sugar.

Step 3

Using a small food-safe paintbrush, lightly brush the egg white mixture onto the petals of each violet, ensuring all surfaces are coated but not overly saturated.

Step 4

Sprinkle superfine sugar evenly over the entire surface of the flower, gently shaking off any excess.

Step 5

Place the sugared flowers on a parchment-lined baking sheet or drying rack in a single layer, making sure they do not touch each other.

Step 6

Allow the candied violets to dry in a cool, dry place for 12–24 hours or until completely hardened and crisp.

Step 7

Once dried, carefully store the candied violets in an airtight container at room temperature. They can be kept for several weeks if stored properly.
