Ingredients

  • 2 cups lima beans (fresh or frozen)
  • 3 tablespoons unsalted butter
  • 1/3 cup brown sugar
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup water

Directions

Step 1

If using fresh lima beans, shell them and rinse thoroughly. If using frozen lima beans, thaw them slightly by rinsing under lukewarm water and draining well.

Step 2

In a medium saucepan, bring the 1/2 cup of water to a boil over medium heat. Add the lima beans and simmer for 5-7 minutes, or until they begin to soften. Drain and set aside.

Step 3

In a large skillet, melt the unsalted butter over medium heat. Once melted, stir in the brown sugar, honey, and spices (ground cinnamon, ground nutmeg, and salt). Cook for 1-2 minutes, stirring constantly, until the sugar dissolves completely and the mixture starts to bubble slightly.

Step 4

Reduce the heat to low and add the softened lima beans to the skillet. Toss the beans gently to coat them evenly in the caramelized mixture.

Step 5

Cook on low heat for 10-12 minutes, stirring occasionally, until the lima beans are tender and fully glazed. Avoid letting the sugary mixture burn—adjust heat as needed.

Step 6

Stir in the vanilla extract in the last minute of cooking to enhance the flavor.

Step 7

Remove from heat and allow the candied lima beans to cool slightly in the skillet. The glaze will thicken as the beans cool.

Step 8

Serve warm as a sweet and savory side dish or snack. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
