Ingredients

  • 3 pieces Lemons or limes
  • 1.5 cups Granulated sugar
  • 1 cup Water
  • 3 cups Ice water
  • 0.5 cups Optional granulated sugar for coating

Directions

Step 1

1. Wash the lemons or limes thoroughly to remove any wax or residue. Pat them dry.

Step 2

2. Use a sharp knife or mandoline to slice the citrus into thin, even rounds, approximately 1/8-inch thick. Remove any seeds.

Step 3

3. Fill a medium saucepan with water and bring to a boil. Add the citrus slices and blanch for 1 minute to remove any bitterness.

Step 4

4. While the citrus slices are blanching, prepare a large bowl with ice water. Transfer the blanched slices to the ice water immediately to stop cooking. Let them sit for a few minutes, then drain and pat the slices dry with a clean kitchen towel.

Step 5

5. In the same saucepan, combine 1.5 cups of granulated sugar and 1 cup of water. Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves completely and forms a syrup.

Step 6

6. Reduce the heat to low and add the citrus slices to the sugar syrup, arranging them in a single layer if possible. Simmer gently for 45-60 minutes, flipping the slices occasionally, until the rinds become translucent.

Step 7

7. Remove the slices from the syrup using a slotted spoon or tongs and place them on a wire rack set over a baking sheet to catch drips.

Step 8

8. Allow the slices to dry at room temperature for 24 hours, flipping them after 12 hours to ensure even drying.

Step 9

9. (Optional) Once dried, coat the slices lightly in additional granulated sugar for an extra sparkle and sweetness.

Step 10

10. Store in an airtight container at room temperature for up to two weeks. Use as desired for garnishes, decorations, or as a sweet treat!
