  • 250 ml Water
  • 1 tablespoon Lemon juice

Directions

Step 1

Wash the cherries thoroughly and remove the stems and pits using a cherry pitter or small knife, being careful not to damage the cherries.

In a medium saucepan, combine the granulated sugar, water, and lemon juice. Stir over medium heat until the sugar has completely dissolved, forming a syrup.

Add the pitted cherries to the syrup and bring the mixture to a gentle simmer.

Cook the cherries over low heat for 45-60 minutes, stirring occasionally, until the cherries become tender and translucent, and the syrup thickens slightly.

Step 5

Remove the saucepan from the heat and allow the cherries to cool completely in the syrup. This allows the cherries to absorb more flavor and sweetness.

Once cooled, transfer the cherries to an airtight container along with their syrup. For a drier texture, you can strain the cherries and lay them on a parchment-lined tray to air dry for 24-48 hours, flipping them occasionally.
