Ingredients

  • 1 kg Small waxy potatoes
  • 120 g Coarse sea salt
  • 3 Garlic cloves
  • 2 Red chili peppers
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • 2 tbsp Red wine vinegar
  • 100 ml Olive oil
  • 0.5 tsp Salt
  • 1 cup Water

Directions

Step 1

Wash the potatoes thoroughly and place them in a large pot.

Step 2

Add the coarse sea salt and enough water to just cover the potatoes.

Step 3

Bring the water to a boil, then reduce to a simmer and cook for 20-25 minutes, or until the potatoes are tender.

Step 4

While the potatoes are cooking, prepare the mojo picón sauce. Peel and roughly chop the garlic cloves.

Step 5

In a blender or food processor, combine the garlic, red chili peppers, smoked paprika, ground cumin, red wine vinegar, olive oil, and salt.

Step 6

Add 1 cup of water to the blender and blend until smooth. Adjust the seasoning to taste and set aside.

Once the potatoes are cooked, drain the water and return the potatoes to the pot. Allow the residual heat to dry the potatoes, creating their characteristic wrinkled skin.
