Ingredients

  • 500 g ground beef
  • 500 g ground pork
  • 1 large onion, finely chopped
  • 2 stalks celery, finely chopped
  • 3 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 250 ml beef broth
  • 0.5 tsp cloves, ground
  • 0.5 tsp cinnamon, ground
  • 1 tsp thyme, dried
  • 1 tsp salt
  • 0.5 tsp black pepper, freshly cracked
  • 2 tbsp unsalted butter
  • 3 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 0.5 cup cold water
  • 1 large egg, beaten for egg wash

Directions

Step 1

In a large skillet, melt the 2 tablespoons of butter over medium heat. Add the chopped onion, celery, and garlic. Sauté until softened, about 3-4 minutes.

Step 2

Add the ground beef and pork to the skillet and cook until browned, breaking it apart with a spoon as it cooks.

Step 3

Meanwhile, in a small saucepan, boil the diced potatoes until fork-tender, about 8-10 minutes. Drain and mash them lightly with a fork. Set aside.

Step 4

Once the meat is browned, add the mashed potatoes, beef broth, ground cloves, cinnamon, thyme, salt, and black pepper to the skillet. Mix thoroughly. Simmer over low heat for 10 minutes, stirring occasionally. Let the filling cool slightly.

Step 5

To prepare the pie crust, combine the flour and chilled cubed butter in a large mixing bowl. Use a pastry cutter or your hands to blend the butter into the flour until the mixture resembles coarse crumbs.

Step 6

Slowly add the cold water, a tablespoon at a time, mixing until the dough comes together. Divide the dough into two equal portions and shape them into disks. Wrap with plastic wrap and refrigerate for 15 minutes.

Step 7

Preheat your oven to 400°F (200°C).

Step 8

On a floured surface, roll out one disk of dough into a circle large enough to fit into a 9-inch pie dish. Gently press it into the dish and trim any overhang.

Step 9

Spoon the slightly cooled filling into the pie crust, spreading it evenly.

Step 10

Roll out the second disk of dough for the top crust. Place it over the filling and trim any excess. Pinch or crimp the edges to seal. Cut a few small slits on the top crust to allow steam to escape.

Step 11

Brush the top crust with the beaten egg for a golden finish.

Step 12

Bake the pie in the preheated oven for 35-40 minutes, or until the crust is golden and flaky.

Step 13

Allow the pie to cool slightly before slicing and serving. Enjoy your Canadian Prairie Tourtière!
