Ingredients

  • 175 grams unsalted butter
  • 200 grams granulated sugar
  • 3 eggs
  • 120 milliliters pure maple syrup
  • 1 teaspoon vanilla extract
  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 120 milliliters whole milk
  • 100 grams chopped walnuts
  • 200 grams dark chocolate chips
  • 120 milliliters heavy cream
  • 100 grams powdered sugar
  • 50 grams toasted walnut halves (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line two 8-inch round cake pans with parchment paper.

Step 2

In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy using a hand mixer or stand mixer.

Step 3

Add the eggs one at a time, beating well after each addition. Then mix in the maple syrup and vanilla extract.

Step 4

In a separate bowl, sift together the flour, baking powder, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the milk. Start and end with the dry ingredients. Mix until just combined; do not overmix.

Step 6

Fold in the chopped walnuts gently with a spatula.

Step 7

Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

Step 8

Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Step 9

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 10

To make the fudge frosting, heat the heavy cream in a small saucepan until it just starts to bubble (do not let it boil). Pour the hot cream over the dark chocolate chips in a heatproof bowl.

Step 11

Let it sit for 2 minutes, then whisk until smooth and glossy. Allow the frosting to cool to room temperature, then beat in the powdered sugar until thick and spreadable.

Step 12

Place one cake layer on a serving plate and spread a layer of fudge frosting over the top. Place the second layer on top and spread the remaining frosting over the top and sides of the cake.

Step 13

Garnish with toasted walnut halves around the edges of the cake or on top as desired.

Step 14

Slice and serve! Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
