Ingredients

  • 180 ml pure maple syrup
  • 3 large egg yolks
  • 1 teaspoon gelatin powder
  • 30 ml cold water
  • 240 ml heavy cream
  • 1 teaspoon vanilla extract

Directions

Step 1

In a medium-sized saucepan, heat the maple syrup over medium heat until it simmers gently. Do not let it boil.

Step 2

In a separate medium bowl, whisk the egg yolks until smooth. Gradually pour a small stream of hot maple syrup into the yolks while constantly whisking to temper them and avoid scrambling.

Step 3

Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens slightly and coats the back of a spoon. This should take about 2-3 minutes. Remove from heat.

Step 4

In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes to bloom. Heat the bloomed gelatin in the microwave for 10-15 seconds until it melts completely.
