  • 2 cloves garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the dried yellow split peas in cold water, removing any debris or damaged peas. Drain well.

Step 2

In a large stockpot or Dutch oven, combine the dried peas, smoked ham hock, water, and chicken stock. Bring to a boil over medium-high heat.

Step 3

Skim off any foam that rises to the surface, then reduce the heat to low and simmer gently for 45 minutes.

Add the chopped onion, diced carrots, diced celery, diced potato, minced garlic, dried thyme, and bay leaf to the pot. Stir to combine.
