Rinse and sort the dried navy beans, discarding any debris or damaged beans.
Place the beans in a large bowl and cover with water. Let them soak overnight or for at least 8 hours.
Drain and rinse the beans, and set them aside.
In a large pot, cook the chopped bacon over medium heat until it is crispy. Remove the cooked bacon with a slotted spoon and set aside, leaving the rendered bacon fat in the pot.

After 3 hours, remove the cover and stir in the cooked bacon. Bake uncovered for an additional 30 minutes to allow the flavors to deepen and the sauce to thicken.
Remove the beans from the oven and let them cool slightly before serving.
