  • 8 slices Canadian bacon
  • 4 medium Golden potatoes
  • 2 medium Apples (preferably Honeycrisp or Gala)
  • 1 medium Yellow onion
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Lemon juice

Directions

Step 1

Wash and dry the golden potatoes, then dice them into 1/2-inch cubes. Peel and core the apples, and cut them into thin wedges. Dice the onion into small pieces.

Step 2

Heat a large skillet over medium heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil to the skillet.

Step 3

Once the butter is melted, add the diced potatoes to the skillet. Sprinkle with a pinch of salt and pepper. Cook for 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender on the inside. Remove the potatoes from the skillet and set aside.

In the same skillet, add another tablespoon of butter. Add the diced onion and cook for 2-3 minutes, until softened.
