Ingredients

  • 12 oz Penne pasta
  • 2 tbsp Olive oil
  • 1 lb Chicken breast (boneless, skinless)
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 8 oz Canadian bacon (sliced and diced)
  • 4 cloves Garlic (minced)
  • 2 tbsp All-purpose flour
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 0.75 cup Parmesan cheese (grated)
  • 1.5 cups Mozzarella cheese (shredded)
  • 2 tbsp Parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or butter and set aside.

Step 2

Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

Step 3

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breast on both sides with 0.5 teaspoons of salt and 0.25 teaspoons of black pepper. Cook the chicken for 4-5 minutes per side, or until fully cooked and no longer pink inside. Remove from the skillet, let it rest for 5 minutes, and dice it into bite-sized pieces.

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the diced Canadian bacon and cook for 2-3 minutes, stirring occasionally, until lightly browned. Add the minced garlic and cook for 30 seconds, or until fragrant.
