Ingredients

  • 50 grams Granulated sugar
  • 115 grams Unsalted butter (cold)
  • 4 tablespoons Ice water
  • 6 medium Apples (Granny Smith or Honeycrisp)
  • 120 milliliters Maple syrup
  • 75 grams Brown sugar
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 1 tablespoon Lemon juice
  • 2 tablespoons Cornstarch
  • 75 grams Rolled oats
  • 75 grams All-purpose flour (for crumble)
  • 85 grams Butter (softened)
  • 50 grams Brown sugar (for crumble)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a mixing bowl, combine 200 grams of all-purpose flour and 50 grams of granulated sugar. Cut in 115 grams of cold, unsalted butter using a pastry cutter or fork until it resembles coarse crumbs.

Step 3

Gradually add 4 tablespoons of ice water to the mixture, stirring gently. Knead lightly into a dough ball, wrap in plastic wrap, and chill for 30 minutes.

Step 4

Peel, core, and slice 6 medium apples into thin wedges. In a large bowl, toss the apples with 120 milliliters of maple syrup, 75 grams of brown sugar, 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, 1 tablespoon of lemon juice, and 2 tablespoons of cornstarch. Set aside.

Step 5

Remove the dough from the fridge and roll it out on a floured surface to fit a 9-inch pie pan. Transfer the dough to the pan, trimming and crimping the edges as needed.

Step 6

Pour the apple filling into the prepared pie crust, spreading it evenly.

Step 7

For the crumble topping, combine 75 grams of rolled oats, 75 grams of all-purpose flour, 85 grams of softened butter, and 50 grams of brown sugar in a bowl. Mix with your hands or a fork until crumbly.

Step 8

Sprinkle the crumble mixture evenly over the apple filling.

Step 9

Place the pie on the center rack of the preheated oven and bake for 50 minutes, or until the filling is bubbling and the crumble is golden brown.

Step 10

Allow the pie to cool for at least 30 minutes before serving. Serve warm or at room temperature, optionally with vanilla ice cream.
