Ingredients

  • 1 approximately 4-5 pounds Whole chicken
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter, softened
  • 4 Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 teaspoon Paprika
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 Lemon
  • 1 Yellow onion, quartered
  • 2 Carrots, peeled and cut into chunks
  • 2 Celery stalks, cut into chunks
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the whole chicken under cold water and pat it dry with paper towels. Remove any giblets from the cavity if included.

Step 3

In a small bowl, combine olive oil, softened butter, minced garlic, chopped rosemary, chopped thyme, paprika, salt, and black pepper to create a paste.

Step 4

Using your hands, carefully separate the skin of the chicken from the breast, taking care not to tear it. Spread about half of the paste generously under the skin, massaging it onto the meat.

Rub the remaining paste all over the outside of the chicken, coating it evenly.

Cut the lemon in half, lightly squeeze it over the chicken, and place the lemon halves into the cavity of the chicken along with the quartered onion.

Spread the carrots and celery evenly on the bottom of a roasting pan. Place the chicken on top of the vegetables, breast-side up.

Pour the chicken broth into the bottom of the pan to help keep the chicken moist during roasting.

Transfer the pan to the preheated oven and roast the chicken for 70-90 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C). Baste the chicken with the pan juices every 20-30 minutes for maximum flavor.

Step 10

Once fully cooked, remove the chicken from the oven and loosely tent it with aluminum foil. Let it rest for 10-15 minutes to lock in the juices.
