Ingredients

  • 4 slices bacon
  • 2 tablespoons unsalted butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 15 ounces canned whole kernel corn, drained
  • 15 ounces canned creamed corn
  • 15 ounces canned diced potatoes, drained
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese (optional, for garnish)
  • 2 tablespoons sliced green onions (optional, for garnish)

Directions

Step 1

In a large pot over medium heat, cook the bacon until crisp. Remove the bacon from the pot, crumble, and set aside, leaving about 1 tablespoon of bacon grease in the pot.

Step 2

Add the butter to the pot with the bacon grease. Once melted, sauté the diced onion until soft and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for 30 seconds, until fragrant.

Step 4

Add the canned whole kernel corn, creamed corn, and diced potatoes to the pot. Stir to combine.

Step 5

Pour in the chicken broth and bring the mixture to a gentle boil. Reduce the heat to low and simmer for 10 minutes to allow the flavors to meld.

Step 6

Stir in the heavy cream, dried thyme, salt, and black pepper. Cook for another 5 minutes, stirring occasionally, until heated through.

Step 7

Use an immersion blender to partially blend the chowder for a slightly thicker consistency, if desired. Be careful to leave some chunks for texture.

Step 8

Adjust seasoning as needed with additional salt and pepper.

Step 9

Ladle the chowder into bowls and garnish with shredded cheddar cheese, sliced green onions, and crumbled bacon if desired. Serve hot and enjoy!
