Ingredients

  • 2 whole fish (cleaned and gutted) Fresh trout
  • 2 tablespoons Olive oil
  • 1 whole (sliced) Lemon
  • 2 cloves (minced) Garlic
  • 2 tablespoons (chopped) Fresh parsley
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 sheets (large enough to fully wrap each trout) Aluminum foil

Directions

Step 1

Start a campfire and allow it to burn down to hot coals, or prepare a grill with medium-high heat.

Step 2

Rinse the trout under cold water and pat them dry with paper towels.

Step 3

Drizzle 1 tablespoon of olive oil over each trout, making sure to coat evenly inside and out.

Step 4

Season the trout with salt and black pepper, both inside the cavity and on the outside.

Step 5

Stuff each trout cavity with a few slices of lemon, half of the minced garlic, and some chopped parsley.

Step 6

Lay out the aluminum foil sheets and place each trout in the center of one sheet.

Step 7

Wrap the trout tightly in the aluminum foil, ensuring no gaps or openings where juices can escape.

Step 8

Place the foil-wrapped trout directly on the campfire coals or on the grill grates.

Step 9

Cook for 7-8 minutes per side, turning carefully to avoid tearing the foil.

Step 10

Carefully remove the foil packets from the heat using tongs or a heat-proof glove and let them rest for 2 minutes.

Step 11

Unwrap the foil packets, checking to make sure the trout is fully cooked (the flesh should be opaque and easily flake with a fork).

Step 12

Serve immediately, garnished with extra parsley or lemon wedges if desired.
