  • 2 cups beef broth
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp salt

Directions

Step 1

Set up your campfire or grill with a sturdy cast iron Dutch oven or large pot.

Step 2

Heat the olive oil in the Dutch oven over medium-high heat.

Step 3

Add the beef stew meat to the pot and brown on all sides. Remove the meat and set aside.

Step 4

Chop the onion, garlic, carrots, potatoes, and bell pepper into bite-sized pieces.

Step 5

Add the onion to the Dutch oven and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and cook for another minute until fragrant.

Step 7

Return the browned beef to the pot along with the carrots, potatoes, and bell pepper.

Step 8

Add the canned diced tomatoes (with their juices), beef broth, paprika, smoked paprika, salt, black pepper, and bay leaf.

Step 9

Stir everything together, then cover the Dutch oven with its lid.

Step 10

Reduce the heat by moving the pot to a cooler section of the fire or adjusting the coals.

Let the stew simmer for 60-90 minutes, stirring occasionally, until the meat is tender and the vegetables are cooked through.

Remove the bay leaf and sprinkle fresh parsley over the stew before serving.
