Ingredients

  • 1 pound ground beef or ground turkey
  • 1 medium, diced onion
  • 2 medium, peeled and diced carrots
  • 1 cup peas
  • 2 cloves, minced garlic
  • 1 cup beef or chicken stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 4 cups mashed potatoes (prepared or homemade)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons butter
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large oven-safe skillet or cast-iron pan, melt the butter over medium heat.

Step 3

Add the diced onion and carrots to the pan. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Add the minced garlic and cook for 1 more minute until fragrant.

Step 5

Add the ground beef or turkey to the pan. Cook, breaking up the meat with a wooden spoon, until browned and fully cooked through. Drain off any excess grease if needed.

Step 6

Stir in the tomato paste, Worcestershire sauce, salt, and black pepper, mixing well.

Step 7

Pour in the stock and bring the mixture to a simmer. Let it cook for 5 minutes, allowing the flavors to blend and the liquid to reduce slightly.

Step 8

Stir in the peas and remove the pan from heat.

Step 9

Spread the mashed potatoes evenly over the meat mixture, smoothing out the top with a spatula.

Step 10

If using shredded cheddar cheese, sprinkle it over the mashed potatoes.

Step 11

Place the skillet in the preheated oven and bake for 20 minutes, or until the mashed potato topping is golden and slightly crispy.

Step 12

Let the Camper's Pie cool for 5 minutes before serving. Enjoy!
