  • 4 pieces White fish fillets (such as cod, tilapia, or haddock)
  • 12 small Baby potatoes

  • 1 medium Zucchini

  • 1 whole Lemon
  • 3 cloves Garlic cloves
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter

Directions

Step 1

Begin by prepping your ingredients. Wash and pat dry the fish fillets. Slice the baby potatoes into halves, the carrots into thin sticks, and the zucchini into rounds.

Peel and mince the garlic cloves. Chop the fresh parsley, and cut the lemon into slices.

Step 3

Tear four large sheets of aluminum foil, each approximately 12 inches by 18 inches. Lay them flat on your work surface.

In the center of each sheet, arrange an even amount of sliced potatoes, carrots, and zucchini. Drizzle 1 tablespoon of olive oil over the vegetables in each packet.
