Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 can (10.5 ounces) Campbell's Condensed Cream of Chicken Soup
  • 0.5 cup low-sodium chicken broth
  • 0.5 cup sun-dried tomatoes (packed in oil, drained, and chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 0.25 cup Parmesan cheese (grated)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown. Remove from the skillet and set aside.

Step 3

In the same skillet, add minced garlic and cook for 1 minute until fragrant.

Step 4

Stir in Campbell's Condensed Cream of Chicken Soup, chicken broth, sun-dried tomatoes, and Italian seasoning. Mix until well combined and bring the sauce to a simmer.

Step 5

Return the chicken breasts to the skillet, spooning some of the sauce over the top.

Step 6

Lower the heat to medium-low, cover the skillet, and cook for an additional 15-20 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 7

Stir in Parmesan cheese into the sauce and let it melt. Adjust seasoning with more salt and pepper if needed.

Step 8

Garnish with fresh parsley and serve hot. This dish pairs well with rice, mashed potatoes, or pasta.
