  • 3 medium, sliced carrots
  • 2 stalks, diced celery
  • 3 medium, peeled and diced russet potatoes
  • 1 cup, trimmed and chopped green beans
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 14.5oz can canned diced tomatoes
  • 2 tbsp tomato paste
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 2 bay leaves
  • 1 tsp, or to taste salt
  • 0.5 tsp, or to taste black pepper
  • 1 cup (optional, to adjust consistency) water

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with salt and pepper, then sear it in batches until browned on all sides. Remove the beef and set aside.

Step 3

In the same pot, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1 minute, stirring constantly.

Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.

Add the seared beef back into the pot along with the beef broth, canned diced tomatoes, dried thyme, dried parsley, and bay leaves. Bring to a boil, then reduce the heat to low and let it simmer, covered, for 45 minutes to tenderize the beef.
