Ingredients

  • 2 cups black-eyed peas (canned)
  • 2 cups black beans (canned)
  • 1.5 cups sweet corn (canned or fresh)
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 medium red onion
  • 1 medium jalapeño pepper
  • 0.5 cups cilantro (fresh)
  • 0.25 cups olive oil
  • 0.25 cups apple cider vinegar
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoons honey
  • 2 cloves garlic (minced)
  • 0.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 4 cups tortilla chips (for serving)

Directions

Step 1

Drain and rinse the black-eyed peas, black beans, and corn in a colander. Set them aside to drain any excess liquid.

Step 2

Dice the red bell pepper, green bell pepper, red onion, and jalapeño pepper into small, uniform pieces. Finely chop the cilantro and set aside.

Step 3

In a large mixing bowl, combine the black-eyed peas, black beans, corn, diced vegetables, and cilantro. Mix gently to combine.

Step 4

In a separate small bowl, whisk together the olive oil, apple cider vinegar, lime juice, honey, minced garlic, salt, and black pepper until the dressing is well emulsified.

Step 5

Pour the dressing over the bean and vegetable mixture. Toss gently to coat all ingredients evenly with the dressing.

Step 6

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

Step 7

Serve chilled with tortilla chips as a dip, or enjoy on its own as a side salad.
