Ingredients

  • 1 pound Boneless, skinless chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Vegetable oil
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Carrot, julienned
  • 1 can (10.75 oz) Campbell's Condensed Tomato Soup
  • 2 tablespoons White vinegar
  • 2 tablespoons Brown sugar
  • 1 tablespoon Soy sauce
  • 0.5 cup Pineapple chunks (optional)
  • 4 cups Cooked white rice
  • 2 Green onions, chopped (optional garnish)

Directions

Step 1

Cut the chicken breast into bite-sized pieces and season with salt and black pepper.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the skillet and set it aside.

In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the red bell pepper, green bell pepper, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
