Ingredients

  • 1 pound Boneless, skinless chicken breasts
  • 2 tablespoons Vegetable oil
  • 1 medium Onion, sliced
  • 1 medium Green bell pepper, sliced
  • 1 medium Red bell pepper, sliced
  • 1 can (10.5 ounces) Campbell's Condensed Cream of Chicken Soup
  • 1 cup Monterey Jack cheese, shredded
  • 1 tablespoon Fajita seasoning mix
  • 8 small (6-inch) Flour tortillas
  • 1 as desired Optional toppings like sour cream, guacamole, or salsa

Directions

Step 1

Cut the chicken breasts into thin strips.

Step 2

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the chicken strips and cook for 5-7 minutes, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced onion, green bell pepper, and red bell pepper. Cook for 5 minutes or until the vegetables are tender-crisp.

Step 4

Return the chicken to the skillet with the vegetables. Sprinkle the fajita seasoning mix over the chicken and vegetables and stir well to coat.

Step 5

Reduce the heat to medium-low and stir in the can of Campbell's Condensed Cream of Chicken Soup. Cook for 3-5 minutes, stirring occasionally, until everything is heated through and well combined.

Step 6

Sprinkle the shredded Monterey Jack cheese over the chicken and vegetable mixture. Cover the skillet and allow the cheese to melt, about 2-3 minutes.

Step 7

Warm the flour tortillas in the microwave or on a skillet. Assemble each fajita by spooning the chicken mixture onto a tortilla. Add optional toppings like sour cream, guacamole, or salsa if desired.

Step 8

Serve immediately and enjoy your Monterey Chicken Fajitas!
