Ingredients

  • 16 oz Frozen broccoli florets
  • 10.5 oz Campbell's Condensed Cream of Mushroom soup
  • 1 cup Mayonnaise
  • 2 cups Shredded sharp cheddar cheese
  • 1 large Egg
  • 0.5 tsp Salt
  • 0.25 tsp Ground black pepper
  • 1 cup Crushed Ritz crackers
  • 2 tbsp Unsalted butter, melted

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Cook the frozen broccoli according to package directions until tender-crisp. Drain well and set aside.

Step 3

In a large mixing bowl, combine the Campbell's Condensed Cream of Mushroom soup, mayonnaise, 1 1/2 cups of shredded cheddar cheese, egg, salt, and black pepper. Mix until smooth and well-combined.

Step 4

Fold the cooked broccoli into the soup mixture, ensuring the broccoli is evenly coated. Transfer the mixture to the prepared baking dish and spread it into an even layer.

Step 5

Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the casserole.

Step 6

In a small bowl, mix the crushed Ritz crackers with the melted butter until the crumbs are evenly coated. Sprinkle the cracker topping evenly over the cheese layer.

Bake the casserole in the preheated oven for 25-30 minutes, or until the topping is golden and the casserole is bubbling around the edges.

Step 8

Remove from the oven and let cool for 5 minutes before serving. Enjoy!
