Ingredients

  • 4 pieces chicken breasts
  • 2 sheets puff pastry sheets
  • 150 grams Camembert cheese
  • 4 tablespoons apricot preserves
  • 1 large egg
  • 1 tablespoon milk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (for dusting)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

In a skillet, heat the butter over medium heat. Sear the chicken breasts for 2 minutes on each side until lightly golden but not fully cooked. Remove and let them cool slightly.

Step 4

Roll out the puff pastry sheets on a lightly floured surface. Cut each sheet in half to make four squares in total.

Step 5

Slice the Camembert cheese into thick slices and place one or two slices (approximately 35-40 grams) in the center of each puff pastry square.

Step 6

Add a tablespoon of apricot preserves on top of the cheese in each parcel.

Step 7

Place a seared chicken breast on top of the preserves, making sure it is centered.

Step 8

Fold the corners of the puff pastry over the chicken to form a parcel, gently pinching the seams to seal them tightly.

Step 9

In a small bowl, whisk the egg with the milk to create an egg wash. Brush the exterior of each parcel with the egg wash for a golden finish.

Step 10

Place the parcels on the prepared baking tray, seam-side down.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the puff pastry is puffed and golden brown.

Step 12

Remove from the oven and allow the parcels to cool for 5 minutes before serving. Serve warm with a side salad or steamed vegetables for a complete meal.
