  • 1 teaspoon Black pepper
  • 1 teaspoon Salt
  • 6 cups Chicken or vegetable stock
  • 4 cups Cooked white rice
  • 0.25 cup Green onions, chopped (for garnish)
  • 0.25 cup Fresh parsley, chopped (for garnish)
  • 2 tablespoons Vegetable oil or butter

Directions

Step 1

Rinse and sort the Camellia red beans to remove any debris or broken beans. Soak the beans in water overnight, or use the quick-soak method (boil beans for 2 minutes, remove from heat, cover, and soak for 1 hour). Drain and set aside.

Step 2

In a large pot or Dutch oven, heat the vegetable oil or butter over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
