Ingredients

  • 2 cups (crushed) Chocolate chip cookies
  • 6 tablespoons (melted) Unsalted butter
  • 1.5 quarts Chocolate chip ice cream
  • 0.5 cups Heavy cream
  • 1 cups Semisweet chocolate chips
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 cup (for garnish, optional) Whipped cream
  • 2 tablespoons (for garnish, optional) Chocolate shavings or mini chocolate chips

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

In a medium-sized bowl, combine the crushed chocolate chip cookies and melted butter. Mix until the crumbs are evenly coated and the texture resembles wet sand.

Step 3

Press the cookie mixture into a 9-inch pie pan to form an even crust along the bottom and sides.

Step 4

Bake the crust in the preheated oven for 8-10 minutes, then remove and let it cool completely at room temperature.

Step 5

Once the crust has cooled, scoop the chocolate chip ice cream into the crust, spreading it evenly to fill the pie shell. Smooth the top with a spatula for a uniform surface.

Step 6

Transfer the pie to the freezer and let it firm up for at least 2 hours or until solid.

Step 7

Prepare the chocolate sauce by heating the heavy cream in a small saucepan over medium heat until it starts to simmer (do not boil).

Step 8

Remove the saucepan from heat and stir in the semisweet chocolate chips, granulated sugar, and vanilla extract. Mix until the chocolate is fully melted and the sauce is smooth. Let it cool to room temperature.

Step 9

When ready to serve, remove the pie from the freezer and drizzle the chocolate sauce over the top.

Step 10

Optionally, garnish the pie with whipped cream and sprinkle with chocolate shavings or mini chocolate chips.

Step 11

Slice and serve immediately. Keep leftovers covered in the freezer.
