Ingredients

  • 2 pounds Chicken wings
  • 4 pieces Garlic cloves
  • 2 pieces Lemongrass stalks (trimmed and finely chopped)
  • 2 tablespoons Fresh lime juice
  • 3 tablespoons Fish sauce
  • 2 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Chopped cilantro (optional for garnish)
  • 2 tablespoons Chopped scallions (optional for garnish)

Directions

Step 1

In a food processor or blender, combine garlic, lemongrass, lime juice, fish sauce, soy sauce, brown sugar, ground black pepper, paprika, and vegetable oil. Blend until a smooth marinade forms.

Step 2

Place the chicken wings in a large bowl or a resealable plastic bag and pour the marinade over them. Toss to ensure all wings are evenly coated. Cover and refrigerate for at least 2 hours or overnight for the best flavor.

Step 3

Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top.

Arrange the marinated chicken wings on the wire rack, spacing them out so they are not touching. Reserve the leftover marinade for basting.
