Ingredients

  • 4 loaves French baguette or Cambodian-style bread
  • 500 grams Beef sirloin or flank steak
  • 4 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 3 cloves Garlic, minced
  • 2 teaspoons Palm sugar or brown sugar
  • 2 stalks Lemongrass, finely chopped
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Vegetable oil
  • 1 medium Carrot, julienned
  • 1 medium Cucumber, thinly sliced
  • 1 cup Fresh cilantro
  • 0.5 cup Pickled daikon and carrot (optional)
  • 4 tablespoons Mayonnaise
  • 2 tablespoons Sriracha or chili sauce
  • 1 tablespoon Lime juice

Directions

Step 1

Slice the beef thinly against the grain and set aside in a bowl.

Step 2

In a small mixing bowl, combine soy sauce, fish sauce, minced garlic, palm sugar, lemongrass, and ground black pepper. Whisk until the sugar dissolves.

Step 3

Pour the marinade over the sliced beef. Mix well to coat the beef evenly. Let the beef marinate for at least 20 minutes or refrigerate for up to 1 hour for more flavor.

Step 4

Heat a skillet or grill pan over medium-high heat. Add vegetable oil and heat until shimmering.

Step 5

Cook the marinated beef in batches to avoid overcrowding the pan. Sear each batch for about 2-3 minutes per side until caramelized and cooked through. Remove from the heat and set aside.

Step 6

Preheat your oven to 180°C (350°F). Lightly heat the baguette loaves in the oven for 5 minutes to make them warm and slightly crispy.

Step 7

Cut each baguette loaf horizontally, leaving one side intact to act as a hinge. Spread a thin layer of mayonnaise on the inside of the bread.

Step 8

Mix the sriracha or chili sauce with lime juice to create a tangy chili sauce. Drizzle the sauce over the mayo layer.

Step 9

Stuff each baguette with cooked beef, julienned carrots, sliced cucumbers, fresh cilantro, and optional pickled daikon and carrot.

Step 10

Serve the Cambodian French Bread sandwiches immediately for best results!
