  • 1 lb raw shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small white onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 2 peppers chipotle peppers in adobo sauce, chopped
  • 1 tbsp adobo sauce from chipotle peppers
  • 1 15-oz can fire-roasted diced tomatoes
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp dried oregano
  • 1 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp fresh cilantro, chopped (optional, for garnish)
  • 4 wedges lime wedges (optional, for serving)

Directions

Step 1

Heat a large skillet over medium heat and add olive oil and butter.

Step 2

Once the butter melts, add the finely chopped onion and sauté for 3-4 minutes until softened and translucent.

Step 3

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Stir in the chopped chipotle peppers, adobo sauce, fire-roasted tomatoes (with their juice), smoked paprika, ground cumin, oregano, salt, and black pepper.

Step 5

Bring the mixture to a simmer and reduce the heat to low. Allow it to cook gently for 8-10 minutes, stirring occasionally, to let the flavors meld.

Step 6

While the sauce simmers, rinse and pat the shrimp dry with a paper towel.

Step 7

Gently add the shrimp to the skillet, nestling them into the sauce. Cook for 3-5 minutes, flipping the shrimp halfway through, until they turn pink and are cooked through.

Step 8

Remove the skillet from heat and taste the sauce, adjusting seasoning if needed.

Step 9

Garnish with freshly chopped cilantro, if desired, and serve immediately with lime wedges on the side.
