  • 1 pound large shrimp (peeled and deveined)

  • 1 medium red bell pepper (diced)
  • 1 medium yellow bell pepper (diced)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 teaspoon fresh ginger (grated)
  • 1 cup coconut milk
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro (chopped, for garnish)
  • 2 cups cooked jasmine rice (optional, for serving)

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with paper towels. Set aside.

In a large skillet, heat the olive oil over medium heat.

Add the minced garlic and grated ginger to the skillet and sauté for 1 minute until fragrant.
