Ingredients

  • 2 pounds Beef chuck or flank steak
  • 2 tablespoons Lime juice
  • 1 cup Orange juice
  • 2 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 3 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 1 teaspoon Allspice, ground
  • 1 teaspoon Thyme leaves (fresh or dried)
  • 1 Scotch bonnet pepper or habanero, finely minced (optional)
  • 1 Red bell pepper, sliced
  • 1 Onion, sliced
  • 2 tablespoons Vegetable oil
  • 2 tablespoons Cilantro, chopped (for garnish)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Cut the beef into bite-sized strips and place them in a large bowl.

Step 2

In a small bowl, whisk together the lime juice, orange juice, soy sauce, brown sugar, minced garlic, grated ginger, allspice, thyme, Scotch bonnet pepper (if using), salt, and black pepper. Pour this marinade over the beef, making sure all the pieces are coated. Cover and marinate in the fridge for at least 1 hour or up to overnight for best flavor.

Step 3

Heat 1 tablespoon of vegetable oil in a large skillet or sauté pan over medium-high heat. Remove the beef from the marinade (reserve the marinade for later) and sear it in the hot pan in batches to avoid crowding. Cook each batch for 2-3 minutes per side until browned but not cooked through. Remove the beef from the pan and set aside.

Step 4

Add the remaining 1 tablespoon of vegetable oil to the same pan and reduce the heat to medium. Sauté the sliced onion and red bell pepper for about 5 minutes until softened and slightly caramelized.

Step 5

Pour the reserved marinade into the pan and bring it to a boil. Reduce the heat to low and let it simmer for about 5 minutes to thicken slightly and cook off any raw flavors.

Step 6

Return the seared beef to the pan and stir to coat it in the sauce. Cover and let it simmer for an additional 10-15 minutes until the beef is tender and cooked through.

Step 7

Taste and adjust seasonings if needed. Garnish with freshly chopped cilantro before serving.
