  • 500 grams calves liver
  • 3 whole fresh oranges
  • 3 tablespoons unsalted butter

  • 50 grams all-purpose flour

  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Juice the oranges to yield approximately 3/4 cup (180 ml) of fresh orange juice. Set aside.

Step 2

Rinse the calves liver under cold water, pat dry with paper towels, and slice into 1 cm thick pieces if not already pre-sliced.

Step 3

In a shallow dish, combine the flour, salt, and black pepper. Lightly dredge each piece of liver in the seasoned flour, shaking off any excess.

Heat a large skillet over medium heat and add 2 tablespoons of butter and the olive oil. Once the butter has melted and is foaming slightly, add the liver slices in a single layer.
